Tivoli Carvoeiro Presents a New Executive Chef Offering a Fresh Menu at The Refurbished The One Restaurant
Tivoli Carvoeiro, on Portugal’s Algarve coast, is delighted to introduce its new executive chef, Bruno Augusto, who is looking forward to heading up the hotel’s gastronomic offering this year, including the launch of a new menu and at the newly redecorated The One Restaurant. Determined and creative, the young chef has developed a menu inspired by the best that the Algarve has to offer and promises to surprise with seasonal dishes that star ingredients depending on the time of year.
With over 15 years of experience in renowned restaurants, Bruno Augusto discovered his passion for cooking while helping his mother and grandmother preparing traditional sweets during his childhood, in a small town in central Portugal. After completing professional training, he started his career working in Michelin-starred restaurants, such as Eleven and Ocean, in Portugal, and at the Grand Hotel Du Lac, in Switzerland. He also worked in two of the most luxurious hotels in Portugal, Penha Longa Ritz Carlton Resort, in Sintra and the Ritz Four Seasons in Lisbon.
A champion of simple cuisine, based on regional ingredients and respect for seasonality to guarantee exceptional quality, Bruno Augusto’s motto is not to over-transform products, instead, preserve the authenticity of flavour. He says: “I am a fan of the most typical flavours and traditional Portuguese cuisine. I try to give an original presentation to traditional dishes, without ever forgetting products’ roots.”
Tucked into the cliff-hugging coast and just a 10-minute walk from the village of Carvoeiro, Tivoli Carvoeiro Algarve Resort’s The One Restaurant is known in the region for its gastronomic concept, which combines traditional fish and seafood from the Algarve’s coast with the best meat from further inland.
In addition to the new menu, guests can also look forward to a more intimate and welcoming dining experience as the restaurant has been fully redecorated for 2020. The large, central art-deco style emerald green sofa draws the eye, as do the magnificent views to the sea and the cliffs beyond. During summer months, the restaurant’s balcony is the hottest seat in the house, as guests can enjoy special flavours while marvelling at the Atlantic sea.
Under the motto “tradition with a twist”, The One Restaurant’s new menu features a variety of tapas with flavours from the Algarve, including grilled scallops with confit pork and cauliflower puree, as well as tuna tartar with tropical fruit chutney and crispy peas. Lobster with polenta, grilled golden bream and john dory with aubergine are all stars of the fish menu, which can be perfectly paired with a selection of Portuguese white wines, especially those from the Algarve region.
For meat lovers, the tomahawk steak with green pepper sauce and Algarvian potatoes, the low-temperature roasted lamb with barley risotto and vegetables and the wild boar tenderloin with vegetables and red fruit sauce are top suggestions from the chef. Algarvian flavours dominate the dessert menu, where the local medronhos (or arbutus) tartlet with cinnamon cream, carob ice cream, tatin pie, honey pudding and the combination of fig and almond tell the story of days gone by in the Algarve.
