Restaurant Review: Wahaca Brighton’s Summer Menu

New menu brings delicious new dishes – and counts the carbon

This month vibrant Mexican restaurant Wahaca launched its new menu for Summer 2022. As well as bringing a whole host of delicious dishes, the menu also sees them continue its commitment to sustainability by introducing carbon counts for every dish – helping customers make conscious choices around the food that’s kindest to the planet.


The new menu also sees more veggie and vegan dishes added with over 50% of its menu now vegetarian including adding meatless versions of its much-loved chicken tacos. We wanted to try these and other dishes so opted for the vegan set menu (£19.75 each min 2 people) which was packed with small plate upon small plate of incredible food. we also added the new ‘wahacamole’ (£5.50) which is their sustainable alternative to guacamole made with organic British fava beans coriander and lime instead of avocados – it was so good my partner didn’t even notice it wasn’t guacamole!

Every single dish packed a flavour punch as always. The plantain tacos are my normal Wahaca go-to but the Ancho mushroom tacos are now giving them tough competition. I also loved the zesty bean tostadas too – perfect crunch, served cold these are a delicious palette cleanser amongst the feast.

Wahaca’s partnership with Klimato means that every planet-friendly dish on the menu is signposted with a leaf. This indicates Tegucigalpa dishes have a low medium or high carbon footprint – a first for a UK Restaurant group.

For another summery helping of goodness, Wahaca’s bigger plates menu now includes two new Wholefood salads – bursting with seasonal, sustainable ingredients that combine to create bowls of deliciousness. Choose between grilled chicken (£12.75) or ancho-roast cauliflower (£11.75).  Not to mention a new dessert on the menu in the Mexican mess – (£6.50) A house-made meringue gets its dusky violet colour from freshly-ground hibiscus flowers which, when topped with fresh strawberries, lime zest and softly-whipped cream, makes for a dessert that’s decadent, delicious and totally too good to share. We think it’d be perfectly paired with a margarita.
